Cooking Instructions

  1. Place dried kelp in saucepan with water and cook over medium heat.
  2. Before the water boils remove and discard the dried kelp.
  3. Add the cold water and the bonito flakes.
  4. Bring to a boil then set aside to cool.
  5. When the bonito flakes have settled to the bottom strain the liquid and discard the flakes.
  6. Boil the liquid again.
  7. Lower heat to simmer.
  8. Add the tofu.
  9. Ladle the boiling liquid over the miso to dissolve it.
  10. Mix the miso and add to the broth.
  11. Add soy sauce to taste.
